We are all pretty dang excited about today’s post and the recipes that will be coming this week.  This week is all about Blendtec.  It’s no secret that around here we loooooove our Blendtecs!  A few years back my husband told that I could either buy a Blendtec or a designer purse for my birthday…and I chose the Blendtec!  I have never looked back.  I use mine at least once every day, and usually multiple times a day.
Many people think that blenders are only for making green smoothies, but I’m here to tell you that is just scratching the surface.  I use mine to chop onions, shred cooked meats, mix cake mix, make soups, mix pancake mix, scramble eggs, and one of my favorites – make salsa!

Today I want to share with you my easy peasy homemade chipotle salsa. One of the things I love about eating at a place like Baja Fresh or Rubios is the Chipotle Salsa.  I love smooth, pureed salsa with lots of flavor and kick.  This salsa recipe is just that!  My husband loved this stuff and requested that it be made again – that is always a good sign!  I also love making Desi’s villa villa salsa salsa.  It’s for sure a favorite around our house!

I can’t describe to you my love for this machine.  I love that is fits under my cabinets on my counter so it is at arms reach all the time.  And I love that it has changed the way I cook.  I feel like I should be a Blendtec salesman in my next life because I am always talking about mine to my friends.  Blendtec is unique in the fact that they have a strong dull blade…so you never have to worry about cutting yourself.  They also have an amazingly strong motor that will result in Jamba Juice textured smoothies, and perfectly pureed salsas.
I love the 5 sided jar!  It basically eliminates the need to scrape the sides.  It’s also a cinch to clean.  A drop of soap, a cup of water, and a few pulses and you’re done.

I love fresh made salsa!  It’s so much better than the jarred kind…and its so darn easy with the Blendtec – just toss everything in and blend until smooth!  If you like your salsa’s a little chunkier just pulse to the desired consistency.

Leftovers will keep in an airtight container for about a week in the fridge.

Ingredients
  • 1 can 14 oz Fire Roasted Tomatoes
  • 3 Roma Tomatoes
  • 1 Onion
  • 3 cloves garlic
  • 1 whole jalapeno
  • 4 chipotle peppers in adobo plus 2 TBSP of the adobo sauce
  • 1 bunch of cilantro
  • 1 lime
  • salt and pepper to taste
Instructions
  1. Combine all ingredients in a blender and puree.
  2. Transfer to a container and refrigerate.

  1. This salsa recipe is making my mouth LITERALLY water. The fire roasted tomatoes and adobo are a nice variation to my usual recipe. Yum.

  2. this salsa looks so good! My husband lived in Mexico for two years, and always complains that my salsa isn’t “authentic”, haha! This one looks authentic. ;) Also, that teal blender (and the lime one!) are rad.

  5. I can’t decide between the pomegranate or the seafoam. I think I need both!!! I’ll use the pomegranate during the autumn/winter months and the seafoam in spring/summer.

  7. I think I originally found this blog by looking up how to cook the perfect steak and loved it so much that I began to follow via facebook and other social media outlets. Since then I have made y’all’s stuffed shells quite a few times and just recently tried the omlet in a bag. Love how healthy, easy, and yummy your recipes are!
