    Cauliflower Cheese Soup

    Cauliflower Cheese Soup is the ultimate comfort food, full of creamy cauliflower, savory onion and garlic and the beautiful cheddar kick we all love and crave. It's simple to make on the stovetop or instant pot. Let me show how!

    Why this creamy Cauliflower soup works-

    This soup fast and easy but more important it is packed with flavor- cheesy punch, silky smooth texture all while being--

    1. low carb
    2. keto friendly
    3. easy to make gluten free!

    Ingredients you will need to make cauliflower cheese soup

    • Sharp cheddar! This is important. Sharp cheddar will counter balance the flavors of cauliflower and all the broth/milk added. If you are using a mild cheddar it the cheesy cheddar flavor we all love will most likely be lost among the flavors.
    • One head of Cauliflower. secret and key ingredient.
    • Vegetable broth. You can sub for chicken but vegetable broth really has so much more flavor and pairs perfect with the cauliflower.

    How to make Cauliflower Cheese soup

    In a large pan start melting you butter. Add your chopped up onion and garlic. Sauce for a few minutes as the onion starts to soften and become translucent.

    Add in your flour, whisk together and let the flour bubble for a few minutes..

    Can I make this soup gluten free?

    yes, to make the soup gluten free use a cup for cup flour in place of the normal flour. I do this all the time. It works great! My go to brand is cup-4-cup.

    Thicken your soup

    Stir in your honey mustard and slowly whisk in your broth.

    Bring your broth to a simmer and add milk and cauliflower. You DO NOT want the milk to boil, but you want the cauliflower to cook for another 10-15 minutes on a low heat until softened.

    Blend your soup

    You can choose to blend your soup a few different ways. You can use a hand held blender OR you can use your kitchen blender for smoothies/milkshakes. I prefer the kitchen blender. It will make the soup much more smooth and cream. When I use the handheld it still tends to be a little more grainy or miss some chunks.

    Stir in your cheese

    Now that your soup is blended return it to the pot.

    Stir in your cheese and let it melt together.

    (if you soup has sat for some reason and cooled reheat it slightly in the pan so the cheese will melt.)

    Serve your cauliflower cheese soup immediately!

    The soup is finished and ready for you to eat! It's delish with some toasted French bread or baguettes! You can try topping it with

    • green onions
    • extra cheese
    • bacon crumbles
    • croutons

    Is this soup similar to Zupas Wisconsin Cauliflower soup?

    Yes! If you are looking for a Zupas copy-cat recipe for their cauliflower soup this is it! It was originally tested and created for this reason. We love that soup but live far away from any Zupas restaurant.

    How can I make this soup in the pressure cooker?

    • To make this soup in the pressure cooker add all the ingredients except flour, milk and cheese.
    • Cook on high pressure for 15 minutes.
    • Quick release.
    • turn on saute setting.
    • Stir flour and milk together.
    • Slowly stir together flour-milk mixture into pot.
    • Add in cheese.
    • when cheese is melted and soup is thickened serve.

    Ingredients

    • 1 small onion
    • 4 TBS butter
    • 2 garlic cloves
    • 3 Tablespoon Flour
    • 1 teaspoon honey dijon mustard
    • 1 can chicken or veggie broth
    • 1 head of cauliflower cut up
    • 2 cups milk
    • 2 cups SHARP cheddar cheese
    • ½ cup shredded parmesan cheese

    Instructions

    • Roughly chop onions, and in butter sauté the onion and garlic till onions are starting to get tender. Add flour, and let bubble for 1 minute.
    • Slowly add milk and broth. Stir in mustard.
    • Add Cauliflower and let simmer for 10-15 minutes until cauliflower is tender.
    • Blend in blender, still smooth and return to plan.
    • On med-low heat add cheese and allow to slowly melt.
    • Serve immediately with french bread.

      Do you use cottage cheese in this recipe? It looks like you are in the picture but it’s not listed on the ingredient list.

        Hi Ana! no cottage cheese, in the photo above there is flour in a cup so it can be measured from it, instead of a giant tub :)

      I love cauliflower soup - it tastes great and is so easy to make. I really like your twist on it and will try it with different colored cauliflower (I'd love to make it with purple cauliflower!).
