For those mornings when you do have a little time, make some coconut steel cut oats! The tropical flavors in Mexico are definitely some of my favorites. Freshly-sliced mango, pineapple, watermelon, and papaya every breakfast. I had to bring these mouthwatering flavors back home with me…coconut everything!

These oats come together in about 25 minutes, but they’re perfect to make ahead on Sunday night and have breakfast every day the next week! Just add a splash of water, almond, or coconut milk, heat it up in the microwave, and you have an instant, healthy, hot breakfast. I love steel cut oats because they don’t really get mushy, and instead they pack a creamy bit of bite. They’re perfect.

Ingredients
  • 1 14 oz. can coconut milk
  • coconut milk can-ful of water
  • 1/8-1/4 c granulated sugar
  • 1/4 t salt
  • 1 c steel cut oats
  • fruit
  • granola
  • sliced almonds
  • coconut flakes
Instructions
  1. Bring coconut milk, water, sugar, and salt to a boil. Add oats. Simmer on medium-low about 20 minutes, or until oats are tender with a tiny bit of bite.
  2. Garnish with fresh fruit, granola, sliced almonds, and coconut flakes.
Recipe Notes

PRESSURE COOKER: Add all ingredients except garnishes (fruit, granola, coconut) to pressure cooker, set to rice/risotto and cook for 10 minutes. Naturally release pressure for 10 minutes, and if there is still time left, quick release the remaining pressure. Garnish with toppings.

  1. I have never heard of OLLY. Thanks for the introduction. I will have to go and visit their site. I adore steel cut oats. I often make them overnight in the slow cooker. It’s a terrific method. It looks like you had a grand time in Mexico. You two look so cute together! What a nice place to visit in winter.
