How Do You Make Coconut Chicken Tenders?
The Batter
First, things first, let's chat about the batter. We are going to use a three-step breading process. This makes for a delicious, moist, and crispy coating on our chicken tenders. For two the the three steps I used ingredients from iHerb. I really love that I can get quality ingredients that are often hard to find at a brick and mortar store. The finely shredded coconut is PERFECTION in this recipe. It crisps up and adheres so much better than a thicker shred.

- Place ingredients in shallow bowls.
- Your bowls should contain the following:
- coconut flour
- eggs
- finely shredded coconut
- Beat eggs until well combined, add paprika and cilantro to the coconut and stir to combine.
Three-Step Breading
Let me show you how to bread these tenders to perfection.
- Skewer your chicken tenders. This step isn't necessary, but it adds a fun touch to your dinner.
- Coat chicken completely in coconut flour. Not only will coconut flour give us the flavor we are going for in this recipe - it also has many health benefits. Coconut flour is naturally lower in carbohydrates than wheat flour, it contains fiber & protein, and it is also gluten free. I am so impressed with the quality of this coconut flour I picked up at iHerb. I love that it comes in a zipper bag for easy storing.
- Dip coated chicken in egg. This is the messier part of the process - completely coat your tender in your beaten eggs. This will provide a sticky coating for our yummy coconut topping.
- Coat in Coconut Mixture. The icing on the cake! Make sure entire chicken tender is covered in your coconut topping.
- Transfer to a wire baking rack. Whether you'll be air frying, like I did here, or baking -you'll want to use a wire baking rack so that all side of the chicken tender crisp up.
- Bake! I used the airfryer. It made for perfectly crispy chicken tenders!
Honey Mustard Dipping Sauce
Every chicken tender needs a dipper. Right? This creamy honey mustard dipping sauce is the perfect mate for your crispy coconut chicken tenders. I also got my ingredients for this at iHerb. I used:
- coconut mayo
- raw honey
- dijon mustard

- Combine canola may, honey, and dijon mustard in a small bowl.

Ingredients
Coconut Chicken Tenders
- 8 chicken tenders
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 cup coconut flour
- 3 eggs slightly beaten
- 1 cup finely shredded coconut unsweetened
- 1 tablespoon dried cilantro
- 1 tablespoon smoked paprika
Creamy Honey Mustard Sauce
- 1 cup canola mayo
- 2 tablespoon dijon mustard
- 1 tablespoon raw honey
- lime wedges for garnish
Instructions
Coconut Chicken Tenders
- Season tenders with salt and pepper.
- In a shallow bowl place coconut flour.
- In a second shallow bowl place slightly beaten eggs
- In a third shallow bowl place shredded coconut, paprika, and dried cilantro. Stir to combine.
- Skewer each tender and then coat in coconut flour.
- Dip in egg, so entire tender is coated with egg.
- Cover completely with coconut mixture.
- Transfer to a wire baking rack.
- If cooking in the air fryer - bake at 375 degrees for about 15 minutes, until golden, and internal temperature is 165 degrees.
- If cooking in oven - transfer baking rack to a sheet pan. Bake at 375 degrees for 25 minutes, or until golden brown and internet temperature is 165 degrees.
- Serve hot with lime wedges and honey mustard dipping sauce.

- Combine mayo, honey, and mustard in a small bowl.
- Stir until will combined.
