Tender chicken tenders, covered in sweet coconut, and baked to a crips.  Add honey mustard dipping sauce to these Coconut Chicken Tenders, and a squeeze of lime for a bite of the islands in a 30 minute dinner.

This post was sponsored by iHerb.  All opinions are my own.

    The Grocery List

Let's talk about what you need to make this delightful dish.  I purchased many of my ingredients from iHerb.  iHerb is an online market for natural products.  They have an ENORMOUS selection of products ranging from grocery, to personal care, to pets.  I love that many products that I enjoy are at my fingertips in one place. iHerb guarantees that you will receive the best overall value in the world for over 30,000 natural products. For this recipe I used iHerb to pick up:

    • coconut flour
    • finely shredded unsweetened coconut
    • dried cilantro
    • smoked paprika
    • canola mayo
    • raw honey
    • honey mustard

And for the fresh ingredients I used:

    • eggs
    • chicken tenders

    iHerb

When it comes to iHerb, I love that orders are shipped from climate-controlled distribution centers, which gives peace of mind to the quality of their products.  They also have wonderful customer service that is available 24 hours a day / 7 days a week in 10 different languages.  iHerb is your one stop shop for locations all over the world.

    Coconut Chicken Tender Ingredients,

How Do You Make Coconut Chicken Tenders?

    The Batter

First, things first, let's chat about the batter.  We are going to use a three-step breading process.  This makes for a delicious, moist, and crispy coating on our chicken tenders.  For two the the three steps I used ingredients from iHerb.  I really love that I can get quality ingredients that are often hard to find at a brick and mortar store.  The finely shredded coconut is PERFECTION in this recipe.  It crisps up and adheres so much better than a thicker shred.

I would 100% recommend checking out iHerb for these ingredients!  They will absolutely improve the outcome of these Coconut Chicken Tenders.

    1. Place ingredients in shallow bowls.
    2. Your bowls should contain the following:
      1. coconut flour
      2. eggs
      3. finely shredded coconut
    3. Beat eggs until well combined, add paprika and cilantro to the coconut and stir to combine.

    Three-Step Breading

Let me show you how to bread these tenders to perfection.

    1. Skewer your chicken tenders.  This step isn't necessary, but it adds a fun touch to your dinner.
    2. Coat chicken completely in coconut flour. Not only will coconut flour give us the flavor we are going for in this recipe - it also has many health benefits.  Coconut flour is naturally lower in carbohydrates than wheat flour, it contains fiber & protein, and it is also gluten free. I am so impressed with the quality of this coconut flour I picked up at iHerb.  I love that it comes in a zipper bag for easy storing.
    3. Dip coated chicken in egg. This is the messier part of the process - completely coat your tender in your beaten eggs.  This will provide a sticky coating for our yummy coconut topping.
    4. Coat in Coconut Mixture.  The icing on the cake!  Make sure entire chicken tender is covered in your coconut topping.
    5. Transfer to a wire baking rack.  Whether you'll be air frying, like I did here, or baking -you'll want to use a wire baking rack so that all side of the chicken tender crisp up.
    6. Bake! I used the airfryer.  It made for perfectly crispy chicken tenders!

    Honey Mustard Dipping Sauce

Every chicken tender needs a dipper.  Right? This creamy honey mustard dipping sauce is the perfect mate for your crispy coconut chicken tenders.  I also got my ingredients for this at iHerb.  I used:

    • coconut mayo
    • raw honey
    • dijon mustard
