- Mayo: Use your favorite tasting mayo! I love Trader Joe's or Hellmann's/Best Food's Mayo. Good quality does make a difference.
- Cream Cheese: For a lower fat version, swap the regular cream cheese for low fat if you want.
- Artichoke Hearts: Make sure you use artichokes packed IN WATER, not marinated or in oil.

- Add in your chunky ingredients- the spinach and artichokes along with the spices and lemon juice.
- Stir until everything is nice and coated.

No, I don't recommend this particular cheesy spinach dip. The mayonnaise and sour cream don't freeze well resulting in a less creamy, watery mess when you thaw it out. However, you can store it in the fridge for up to five days. Some ideas for using up the leftover dip are to stuff it into chicken breasts, use it as a filling for quesadillas or reheat for another round of hot spinach dip.

Easy Cheesy Spinach Dip with Artichokes
Ingredients
- 30 ounces artichoke hearts 2 cans, drained, not in oil or marinated
- 2 cups fresh spinach chopped
- 1 8 oz cream cheese room temperature
- ½ cup mayo
- 1 cup fresh parmesan cheese
- ½ lemon
- 1 teaspoon garlic salt
- 1 teaspoon onion salt
- fresh ground pepper
Instructions
- In a mixing bowl, using a hand held mixer, beat your room temperature cream cheese until it is smooth and fluffy, about 30-60 seconds.
- Add in mayo, ½ cup parmesan cheese, juice from half a lemon, and lemon and garlic salts. Mix.
- Chop artichoke hearts into bite size pieces, and rough chop spinach. Toss into bowl and mix with spatula so everything is well coated with ingredients.
- In an 8x8 pan or pie dish place spinach artichoke dip inside. Top with extra parmesan cheese and fresh ground pepper. Bake at 375 for 20-30 minutes when top is turning golden brown and is bubbling.
