    Almond Joy Brownies

    Almond joy brownies - classic brownies with a candy bar twist.  Use a box mix as your base and turn up the volume with coconut and chocolate topping.

    What Are Almond Joy Brownies?

    Almond Joy brownies are a delicious twist on classic brownies.  We've added a layer of almond cream and topped them off with chocolate ganache.  You will die when you taste these!

    What Do I Need To Make Almond Joy Brownies?

    • 1 brownie mix + required ingredients
    • sweetened coconut flakes
    • cream cheese
    • powdered sugar
    • vanilla extract
    • coconut extract
    • almonds
    • whipping cream
    • dark chocolate chips

    How Do You Make Almond Joy Brownies?

    1. Make brownies according to box directions, adding optional ⅓ c chopped almonds to batter.
    2. Stir until well combined.
    3. Transfer batter to an 8x8 pan.
    4. Do not overbake. Let cool.

    Using A Thermometer When Baking

    We all know we should use a thermometer when making candy, baking a turkey, or cooking fish.  But did you know you can use a thermometer when baking?  Instead of those toothpick tests, bounce back tests, and other methods to check if your baked items are finished - why not rely on a thermometer? You'll have a perfect bake every time!
    Our favorite thermometer is BY FAR Thermoworks.  They read almost instantly, and they are so reliable.  I've had mine for years and I use them ALL THE TIME.  Their classic Thermapen is really the jack of all trades.  I use this guy for baking, candy making, for grilling, and of course for my Thanksgiving turkey. This is a staple for my kitchen, and it should be for yours.  I've purchased so many cheap thermometers in my day (that would break after a use or two) - and I wish I would have just invested in a Thermoworks.  Because it would have saved me money in the long run.
    For brownies - you want the internal temperature to be 212 degrees.

    The Coconut Filling

    1. Whip cream cheese in stand mixer until fluffy, about 1 minute.
    2. Add 1 cup coconut, mix well.
    3. Pour in powdered sugar and slowly start mixer. Mix to incorporate well. Add in vanilla extract, coconut extract, and salt.
    4. Scoop out and spread evenly over cooled brownies.

    The Chocolate Topping

    1. Add whole almonds to the top of the coconut layer - so that there is one almond in each serving.
    2. Heat cream in heavy saucepan over low-medium heat. Once cream has been steaming for several minutes, whisking constantly, remove from heat.
    3. Pour in chocolate chips and let stand 5 minutes. Whisk together until chocolate has melted and ganache is smooth and shiny.
    4. Pour over cream cheese layer.
    6. Chill in refrigerator several hours.
    7. Cut using sharp knife, ran under hot water, and cleaned between slices.

    Variations

    To make a thinner layer of chocolate, decrease chocolate chips and whipping cream with a ratio of 1 package chocolate chips to 1 c cream. Intensity of chocolate chips is also optional (dark, semi-sweet, milk), as well as adding chopped almonds to the brownie batter.

    A Decadent Treat

    Get your ice-cold milk ready. These babies are supremely rich. I actually don't even drink milk, I prefer cold water after cake and ice cream and anything else that leaves one hankering for a glass of milk. Is that gross?

    Chill your brownies. Run your sharp knife under hot water before slicing, and wipe it off between slices. TRUST ME.
