I just harvested my first zucchini of the season, and didn't waste any time turning it into my favorite fried snack. This recipe is easy to customize however you like it, spicy, garlicky, but this is a good foundation for you to build upon. Light crispy battered zucchini. After slicing the zucchini all you do is dip it in egg, then a batter with a mixture of dry ingredients. Fry it on medium-high heat (so it has a little time to cook the squash without burning the crisping batter) and . . .
There can never be too many varieties of lasagna, right? This is one that my mom often made for us growing up. She is a big veggie lover and advocate of teaching children to love veggies. So we always had veggies for dinner- always. She did such a great job passing that love of healthy vegetables on to us kids. All 5 of us kids choose to eat them as adults. He really enjoys and good pot pie, and since I have a good pie crust recipe (and know I can pull it off) I decided to see if I could pull off the inside. I looked up a bunch of other recipes and noticed a lot of them called for things like canned cream of chicken soup or a can of veg-all. Not what I'm going for. I want the creamy gravy inside. maybe even . . .
We love our vegetables, ok not ALL of us, but 75% of us, which means the majority rules. I make it a priority to cook a veggie every dinner and always plate them. Jack usually tries them, thank goodness, but also usually spits them out. oh well. Taste buds change right? so do attitudes. I plan on cultivating him into a veggie lovin fool. these are Super easy, and GREAT for all the far harvest commin in soon. Simple and yummy to throw on for a . . .
