These Baked Potato Skins are ALWAYS and major hit! Total MAN food. I made them for a football party recently and the guys guzzled these things down, not to mention the ladies that attended... These are great as an appetizer, a side dish or for a party, like the superbowl! Honestly though what is not to like? These are all worth the calories! Baked Potato Skins are pretty fast and easy to make, in fact I usually make baked potatoes the night before- using the insides for dinner and save the . . .
We went to law school in Moscow. Moscow Idaho. not "Moss-cow" but moss-coe idaho. (Don't get it wrong up there or they'll start calling you a cow and all sorts of nonsense) It's a teeny tiny hippy town. Held together by an engineering company and the college, right on the Washington/Idaho border. It's also the best town ever. I dreaded moving there- living in a town there are very little options for any kind of shopping or activities or eating, and yet, when it came time to leave I was beyond . . .
My husband works in the big city. He commutes on the train in, takes a subway to a LA skyscraper, works long hours and then goes back to his train to come home. During certain times of the year he works such long hours that he receives a budget for a food allowance. There is pretty amazing food in the city. Sometimes I'm lucky enough that he brings home half of the meal. S'mac n Cheese from the Nickel Diner is one meal I beg for him to bring home. It's the best mac n cheese you'll ever . . .
I had a really lovely Thanksgiving this year. We're watching our niece all week while my sister and brother-in-law carelessly fleeted off to the Caribbean to prance around blissfully child-free. Bless them. And us. So despite the crazy factor, we fried our own turkey (two, actually) which was one of the best decisions I believe I've ever made. Ranks right up there next to deciding to accept the rock my now-husband gave me when he proposed, but that is neither here nor there. He's too dreamy, I . . .

This may sound silly but these cheesy potato fries helped put this blog, Oh So Delicioso on the map. Years ago (2012) I pinned this recipe and while it floated around on pinterest for a few months and nothing happened one day I woke up to an email in my inbox. She said she had pinned our recipe AND featured it on her blog. Then made this comment- hello dearie! Heads up! I've featured your recipe here and as of right now your recipe has been repinned more than 1100+ times (whoot whoot) I . . .
