With Easter morning around the corner, I thought I would share our breakfast tradition of egg souffle. I've shared this recipe on the blog before, but wanted to pull it forward for the upcoming holiday. Holiday Traditions Growing up my mom would ALWAYS make this meal on Easter and Christmas morning. As an adult I've continued this tradition and always look forward to that little reminder of home on the holidays. Not only is this meal special and delicious - but all the work in done the . . .
This time of year I get all sorts of ideas for elaborate dinners, perfect presents, cookies baking in the oven, and a Pinterest-worthy decorated home. Let's get real for a second. No one can have all of those things and still sleep. For this reason I love meals like this rosemary chicken and potatoes. This entire meal is made in one pan! The meal turns out elegant and beautiful, while the prep time is around 10 minutes. When I make this Rosemary Chicken and Potatoes meal it is a huge hit! . . .
Enchiladas are like tacos, the best food of all time. You can gussy them up about a million different ways, and they're good every.single.time. I went with roasting a bunch of red bell peppers, poblano peppers, and onions, and that served as the base of the filling and sauce. Those tortillas there are homemade...I'm still perfecting the recipe, I've tried about 8 different variations so far, but I'm almost there. Believe you me, I will post that sucker when it's done. They're so . . .

Okay you guys. I have a love hate relationship with French Toast. I'm not a huge egg fan so often when I order french toast at restaurants I am disspointed when there is sooo much egg on them. I just can't eat it like that. This baked French toast recipe has lots of eggs in it, but doesn't have that "eggy" taste to it. It is so moist and flavorful, this recipe is one of my go-to's. It's easy to whip up at night, throw in the refrigerator. Let it sit overnight and all the flavors and juices . . .
I have yet to serve this to a soul who does not end up LOVING this recipe. Seriously, my biggest mac n cheese critics have all walked away asking for the recipe. In all honestly it's not too far off from every other mac n cheese recipe out there-- BUT there are a few secret ingredients that you may be missing when your making your mac n cheese. First...obviously....is about the cheese... You can add all the different variety of cheeses you want, and they'll taste incredible, but for a real . . .

Mother's Day is one day that is pretty darn special to me. Growing up I always dreamed of being a mother. FUUUUNERAL POTATOES...I tried to think of a better name, or another name they might be called, because, well- 'funeral potatoes' isn't necessarily a bad thing, but it's not the best either. Especially for one of the best all time comfort foods in the world. It's name almost suggests the opposite. Cheesy Funeral Potatoes are the perfect meal to serve at holidays, and parties. It's one of those dishes that can be made ahead, serve a ton, and tastes AMAZING. Who doesn't love a little cheesy . . .
A few years ago I was assigned to bring the "yams" to Thanksgiving. I started asking around how others prepared them. There is always the typical chop them up with butter over and marshmallows.. which is good. I thought I would go with tradition until my girlfriend introduced me to this recipe and I just love love love it. It has a nice crunchy sweet crust and creamy base. So sweet, I've considered having it as a dessert! First of all, when we make this, we use sweet potatoes. Not yams. . . .
