We’re back with another summer snack idea! Up on the menu today are lime and sea salt sweet potato chips. Toss that bag of greasy potato chips in the trash and hand your kids and bowl of these babies!
I love that I know what is in these snacks. Today all you have are sweet potatoes, lime, and a pinch of salt. I certainly don’t feel guilt serving my kids this snack.
With the sweet potato, the tart lime, and the crunch of sea salt – this is sure to be your new favorite afternoon munchy.
- 2 sweet potatoes
- juice from 1/2 lime
- a sprinkle of sea salt
- Peal sweet potatoes.
- Slice between an 1/8 inch and 1/4 inch with a sharp knife or mandolin.
- Blanch by placing in a large pot of boiling water and cooking for about 5 minutes. Drain and cool.
- Place in a large bowl and toss with lime juice.
- Sprinkle with sea salt.
- Transfer to a dehydrator and dry on medium heat for 4-6 hours. If dehydrating in the oven, set oven to lowest temp and bake on a cookie sheet lined with parchment paper or a silpat. Bake for 3-5 hours.
If using an oven place on a non-stick tray and set oven to lowest temperature. Place baking sheet inside oven and prop door open with a wooden spoon. Bake for 2-4 hours.
