This is one of my favorite side dishes. I feel like it pairs perfectly with chicken, fish, beef, pork…just about anything.
I love how roasting makes the sweetness of these veggies really stand out. I’m getting’ hungry just typing about them.
It’s also incredibly easy. Here’s what you’re going to need:
1. Red Potatoes
3. Sweet Potatoes
5. Olive Oil
8. Garlic Salt
Toss it all together. Place it in a baking dish or sheet pan. Here I used a 9×13 baker by Fiesta. Fiesta has quickly become my favorite for bakeware and serving ware. Remember the Dutch Oven we gave away in our Cooks Christmas giveaway? Fiesta was behind that beautiful gem as well. The quality and color are unbeatable. I just placed an order on Amazon for pie plate that I can’t wait to get. Little does my husband know, but I want to replace all my plates with Fiesta plates…maybe a little at a time.
Pop it in the oven…
And out come a delicious, healthy, and tasty side that will compliment your dinner perfectly.
Even my kids love their veggies like this. My 14 month old begs and begs for more and more even after helping after helping.
Do yourself a favor and roast some root veggies this week. You won’t be disappointed!
- 3 small red potatoes, diced
- 1 large parsnip, diced
- 2 large carrots, diced
- 1 large sweet potato, diced
- 3 TBSP olive oil
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1/2 tsp garlic salt
- Toss all ingredients together.
- Place in a 9x13 baking dish or on a baking sheet.
- Bake at 400 degrees for 45-60 minutes.
