Are you guys loving our Cinco De Mayo Week!? This week is seriously one of my favorites. I’m a huge lover of Mexican cuisine. Fresh salsas, tender meats, and lime over everything. Today I’m sharing with you my Pico De Gallo. There are about a thousand ways to make Pico. In true street taco form pico typically is tomatoes, onions, and cilantro. Drizzle some glorious lime and pinch of salt and your done. Simple and amazing.
While I am a fan of this method, when I am fixing up some Pico to make my own taste buds good crazy… I throw in a few extra things. And the best part about a recipe like this.. is how ridiculously healthy it is. All natural ingredients, fresh real produce, and no fat at all! Load up your taco folks. Real food here, nothing better.
So let me tell you about this pico recipe.. Des was the first lover of pico. She got me hooked. I started mixing up my own at home and snacking on it during the days. She likes her pure and simple. More street taco style. I started adding in a bell pepper, mostly for more nutrition. Over time I grew to love the combo. I also douse mine in lime juice, sometimes even lemon. Over the years have played with seasonings. Added some, taken away some. But time and time again, I have come back to these core ingredients I’m sharing today.
My two main spices are cumin and chili powder. I go through cumin like it’s nothing. When I comes to spices, I buy these from a variety of sources. None of the bottles or bags match and it drives me crazy. I’m a little weird when I comes to organizing. So I use containers from Ikea. They all look the same, stack the same and it’s easy. But I’m obviously not one for calligraphy.
Now like I said, I go through cumin like crazy. I love it. But I realize not everyone does. So this recipe calls for just the right amount to give good flavor with out offending anyone. If your like me and go crazy over it, feel free to add some more. Give everything a good mix and taste test. Add more of anything to your preference. (Just remember you can always add more but can’t take away.) This can be served right away, but if you really want it to be amazing, cover and chill for a day. The flavors have time to marinate and really make some magic. You might need to add more salt each day- tomatoes love their salt.
- 5-6 roma tomatoes
- 1 yellow bell pepper
- 1/4 C minced brown onion
- large handful of cilantro
- 2-3 cloves of garlic
- 1-2 limes
- 1 1/2 tsp cumin
- 1 tsp chili powder
- 1-2 tsp salt
- Wash and dice tomatoes, bell pepper, and onion.
- Mince cilantro and garlic.
- Mix all in a large bowl.
- Add the juice of the limes depending on your preference.
- Add seasonings, more if desired.
- Stir well. Cover and store in fridge until ready to serve.
Allow to rest in fridge, flavors get better over time.
