This isn’t your average grilled cheese sandwich. I sometimes get in a lunch rut. I forget about all the fun things I can add to make a dull meal into something much more tasty and fabulous. I’m a cheese lover and have always loved a good grilled cheese sandwich. This one takes it to the next level. When buying mozzarella cheese, go for better quality. The pre-grated bagged stuff just won’t taste as good. I like the kind that comes in ball form, wrapped in plastic. I have to admit, I sometimes sneak into the fridge and cut off a slice of cheese and eat it. I love cheese that much.
You can’t tell from the picture above, but I’m using my electric skillet. In recent months, I have fallen in love with it. I don’t know why I haven’t used it more in the past. It cooks better than a pan and you can make 3 times more of anything. Here’s a link of a skillet if you’re in need of one.
My 3 year old loved this Pesto Grilled Cheese Sandwich. It’s great when I can make something with spinach and avocado that she will eat.
- 2 Slices of Wheat Bread
- 1 T. Pesto
- 1/4 c. Spinach
- 1/4 of an Avocado
- 4 slices of Mozzarella Cheese
- 1 T. Butter
- Preheat grill to medium heat
- Butter one side of each piece of the bread
- Spread pesto on one side of bread
- Add Spinach, Avocado, and Mozzarella Cheese
- Cook till both sides are golden brown and the cheese is melted in the middle.
