I am a wife and mom of 3 little kiddos living in Southern California. I started doing interior design with my mom almost 8 years ago and it is a true passion of mine. I really love all aspects of design and creativity. When my son was born, I developed my love for photography and started my own business which led to some amazing experiences – shooting weddings all over the country and meeting amazing people along the way. When we moved to Los Angeles for my husband to attend USC dental school, I knew it was the right time to dig into what LA has to offer, and with the encouragement of those around me, I started my own pillow + textile line, formerly known as GRINN. Last year, I combined forces with a parter and together we developed a baby line as well as a kids clothing line under our company STAY + Co. At the beginning of this year I realized I needed to scale back and focus on what I really wanted to do and be true to who I am. So… here I am today, blogging about the things I love and of course, I am always dreaming + working on my next business. One of the things I do not like to do is cook – ironic right? since I am here blogging on the amazing Oh So Delicioso blog. Ok, it’s not that I don’t like to cook, it’s that I don’t like taking the time to cook, but when I actually do, it’s rewarding to put a healthy, balanced meal on the table for your family. I love to find healthy, quick meals that my kids don’t complain about. This is our fave go-to 20 minute ONE PAN meal and my kids L O V E it! I try to incorporate fish at least once a week and Talapia is so mild that they totally eat it up. Here’s the thing: people always tell me that it is crazy my kids like fish, but the thing is, they don’t know that they shouldn’t (or that tons of people don’t like it). If you warn them, they will automatically decide it’s gross, but if you tell them it’s chicken, they won’t give it a second thought ;) Seriously my daughter thinks it’s chicken.
20 min, One Pan Tilapia Meal
- talapia filets
- spike seasoning
- olive oil or coconut oil
- salt + pepper
- fresh veggies of your choice
- thaw filets
- cut veggies
- place foil on a cookie sheet
- rub olive oil and Spike seasoning on filets
- in a separate piece of foil (but on the same cookie sheet) place veggies and season to preference (we like salt, pepper and a little garlic salt)
- bake at 400 degrees for 15 minutes and cook your rice at the same time
- done and ready in 20 minutes!
