Hello Oh So Delicioso readers! I’m Mel from SoFestive — a blog dedicated to real and simple ideas to make your party, holidays, and life a bit more festive. One of the biggest myths when it comes to party planning and entertaining is that it’s complicated, hard, and has to be Pinterest-worthy to be a success. Sure, we all like an awesome party, but planning doesn’t have to be overwhelming. And sometimes, less is more.
That’s why I have teamed up with the talented photographer Marcelle Calder to bring a new series called A to Z: Party Planning 101 . Each Monday, we feature a new party element and share how you can easily incorporate that into any party.
We just started up our 2nd Semester and we’d love to have you join in! It’s free, fun and you’ll come away with numerous tips and tricks for stress-free and easy party planning. While we are talking about parties, here’s a festive party food for you right in time for St. Patrick’s Day. We’ll call it Leprachaun’s Lunch Munch (since leprachauns obviously eat lime jello popcorn for lunch, right?) Okay, maybe not. But it sure sounds more festive with a name like that. It’s super easy and one of our favorite treats!

- 8 cups popped popcorn
- 1/4 cup butter
- 3 Tbsp. light corn syrup
- 1/3 cup white sugar
- 1 small package of lime gelatin
- Heat oven to 300. Line a cookie sheet with tin foil and set aside.
- Melt butter in a large sauce pan on low heat and stir in corn syrup. Add in sugar and gelatin.
- Once it is all mixed together, bring to a boil on medium heat. Simmer on low for 5 minutes.
- Immediately pour onto popcorn and stir until popcorn is covered well.
- Spread onto cookie sheet and bake for 10 minutes.
- Let cool. Break apart and enjoy!
