It's better than any other cheesy potato recipe you've ever tried, and I promise just as easy.
These cheesy potatoes casserole is the perfect dish for almost every occasion. Their creaminess, chunky potatoes and extra cheesy goodness all screams comfort food.
Even better they go with everything! For the holidays our family loves them with fried turkey, traditional stuffing, and turkey gravy. For weeknights, it make a great side dish for pressure cooker frozen roast beef or herb crusted pork roast.

Ingredients
Ingredients for this funeral potatoes recipe is easy! Pick them all up in a quick trip to the grocery store.
- Hash browns - You can use shredded or diced potatoes for this recipe. Thaw your hash browns for about 30 minutes before making this recipe.
- Medium Cheddar Cheese - This is my PRO tip for any cheese sauce (like this recipe or Mac n cheese) Use a stronger cheese that mild. It helps you have a nice creamy cheddar cheese flavor we love.
- Spices- Garlic salt, onion salt and flaky sea salt are a must!
- Broth- vegetable broth or chicken broth is perfect.
- Sour Cream- is the secret ingredient that give it a little extra creamy flavor and tang.
- Corn Flakes- if desired you can top your casserole with cornflakes for a little added texture. Omit if it's not your thing.
PROTIP: When I'm using chicken broth but do not quite the amount of a can or carton I like to make my own with a gluten free bouillon and hot water. That way there is no waste.
How To Make Cheesy Potato Casserole
- In a large sauce pan make a roux. Melt butter, add flour and whisk to combine. On low heat allow to bubble for 60 seconds. *If making gluten free use Cup-4-Cup gluten free flour here.
- Slowly whisk in your broth, milk and all the seasonings. Whisk on low heat until sauce is thickened.
- Turn off heat. Add cheese
- Add thaw's potatoes. (If your potatoes are still frozen thats ok, you will want to add some additional baking time to your casserole. Cover with foil so your top does not over cook)
- Stir together until everything is well incorporated.
- Transfer to a greased 9x13 pan.
- Top with remaining shredded cheese.
- If desired top with corn flakes and chives. Place in oven to bake!
FAQ'S ABOUT CHEESY POTATO CASSEROLE
Yes you can prepare it ahead of time. Do everything except adding your corn flakes. Cover and refrigerate. An hour before baking remove from fridge to allow dish to come to room temp. Top with cornflakes and then bake.
Place leftovers in an air tight container and store in the fridge for 5-7 days.
YES! some funeral potatoes call for cream of chicken soup. If you prefer that method you would not make the roux with flour, butter, broth and milk. Instead add in a can of cream of chicken soup, sour cream and spices. Follow directions from then on.

Funeral Potatoes
Ingredients
- 2 TBS Flour
- 2 TBS Butter
- 1 cup milk
- 1 cup broth
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 cup medium cheddar cheese
- 1 cup sour cream
- 32 ounces bag of diced potatoes
- 2 cup corn flakes
- ¼ cup green onions chopped optional for topping
Instructions
- Set potatoes out to thaw.
- In a skillet melt butter of med heat. Whisk in flour and let bubble for one minute. Slowly stir in milk and broth. Add in seasonings. Then thickened turn off heat and let cream of chicken cool a little.
- In large bowl add potatoes, 1 ½ cup sharp cheddar cheese, sour cream and cream of chicken. Stir together until well combined.
- Place in 9x13 pan and top with remaining cheese and corn flakes.
- Bake at 350 for about 45 minutes or until top is golden.
