I feel so blessed to have known Jess since we were in grade school. She and I bonded over handmade paper dolls and have been friends ever since. Hi There! I’m Jess. A wife, mother of 4, baker, DIYer and the mama behind the blog MommyMakesThings.com. I started blogging years ago as an outlet for all the chaos going on in my life after adding triplet girls to our family! Yeah, you read that right! It’s safe to say that my life completely changed when they joined our family and it’s been so important for me to get some “me time” in there.
I accomplish that by finding ways to create in my life. From kid fashions to home decor to holiday parties and furniture makeovers and more. I might as well just say I like making pretty things I can’t afford to buy haha! Right? But truly, learning to balance family life and still finding inspiration to create things I can be proud of on a budget has been incredibly healthy and fulfilling in my life and I’m grateful for all of the readers that find something they can enjoy on my blog.
Healthy eating is important to most mothers, but it’s not always as quick and easy as we would like. That doesn’t mean we can’t do it! I believe everyone has to find what works for them. Usually with our chaotic life the way to keep our meals balanced and our kids thriving is by keeping it simple. One of our favorite healthy snacks are Dill Cucumber Bites. Our children go through cucumbers like you wouldn’t believe so thank goodness they stay fresh a while! This is a recipe I’ve adapted from my mother in law. It can be served in a big marinated cucumber style salad or served fun and bite sized for the littles. I’ve learned that anything that is bite sized and involves a cute paper straw won’t be left behind!
I hope you enjoy this simple healthy snack and find your own way to get creative with it and find other dishes to add it to!
- 4 cucumbers, sliced
- 1/2 pt sour cream
- 5 tbsp mayonaise
- 1 1/2 c water
- 1/4 c vinegar
- 2/3 tbsp sugar
- 1 tsp dill
- Toss all ingredients in a large bowl.
- Cover and chill for 30 minutes and up to overnight.
- Serve as a salad, or skewer.
