How many of you started out the school year making cute little color-coordinated lunches with cookie cutters and exacto knives and love notes for a lucky child? How long did those last throughout the year…?
Yeah, me too. BUT! Holidays are the perfect time to get back into the groove. Once or twice around the holidays I like to attempt some creativity, makes me and the kid happy. Today we are partnering up with Beanitos for a fun Halloween lunch. Beanitos’ first ingredient is, you guessed it, beans. Genius, right? So that means all of their chips are baked and packed with protein and fiber, and are gluten/corn/GMO-free, and have zero artificial ingredients and zero grams of trans-fat. They have several different flavors, but my kids absolutely love this mac n’cheese flavor. And I totally don’t feel guilty handing these out as snacks!
Beanitos Crunch come in several different sizes: 7 oz. bag, 21 oz. bag – available only at Costcos in the NW and Texas regions (for a limited time only, while supplies last) and lastly, in their 1oz. 6ct snack sized bags on Amazon or across retailers seen on the Beanitos store locator.
I made quesadillas with spinach, black beans, and cheddar cheese and then used pumpkin cookie cutters for the pumpkin shapes. Split olives in half, then cut little legs out of one half for some creepy spiders. Apple slices with marshmallows create the perfect scary mouth!
And of course, my kids’ new favorite healthy snack that is currently ruling our world!
