Do you guys know how to pick the best, sweetest cantaloupe? When you are picking out the melon, smell where the vine was attached. The stronger it smells the riper, sweeter it is. I don’t know where I heard this advice but its been the most reliable piece of advice I’ve had about picking the best fruits so far! Now, let me tell you about this salad…
This salad is really simple and it’s own ingredients are the main show. So you want to be sure to have great fresh fruits. I shop at Ralphs Grocery, and have yet to pick a bad melon. I also love that I can buy fresh, organic cilantro. Cilantro is an herb that I notice a BIG flavor difference in from store bought to organic, and even home grown.
My husband, Nate, came home a month or so ago talking about the most delicious, unusual salad he had had at a work luncheon. It had cucumber, cantaloup and cilantro. I pressed him for a few more details, like- did it have a limey twang? Or a sweet syrup? This salad intrigued me so much I craved it for a couple of weeks before finally breaking down and trying it out. It was so simple and quick but full of unique flavors. This will be great for the summer, while all these fruits are at their peak sweetness.
- 1 ripe cantaloupe
- 1 cucumber
- 1/2 cup chopped cilantro
- 1 lime juice
- pinch of salt
- Chop up cantaloupe and cucumber into small bite size pieces. You can chop them however small or large as you want. Combine in large bowl.
- In a small bowl combine cilantro, lime and salt. stir and pour over cucumbers and cantaloupe. Toss to combine.
