I don’t know about you – but pancakes are a favorite around my house. My boys all LOVE pancakes and ask for them morning, noon, and night. As a kid I also loved a good pancake. My mom loves to tell the story about how I consumed only pancakes and hotdogs for the first 3 years of my life. I still like pancakes, but a few hot dogs per year is all I can handle.
Homemade Mini Pancakes
I was inspired to create this recipe after spending a small fortune on packages of store-bought frozen silver dollar pancakes that my kids adored. A friend was visiting and saw me grab a bag out of the freezer and sternly told me that I should just make homemade pancakes, put them in baggies, and freeze them – rather than spending money on the packaged kind. She was right. A few days later I whipped up a batch of mini pancakes and into the freezer they went. It was a quick and easy breakfast for my boys that I felt good about feeding them. Since then I’ve made many batches of mini pancakes – sometimes I’ll even add mini chocolate chips to make them extra specials.
On day while I was making these tiny pancakes I had the thought that they would be perfect for little pancake skewers. And even more perfect for a Mother’s Day Brunch. I knew we had out big Mother’s Day series coming up and so I went to work creating the perfect picnic pancake.
Mother’s Day Brunch
I live in the Seattle area and we have had a WET winter. Even wet for Seattle standards. So when the grass started perking up and the sun started to peek out I couldn’t wait to soak up the outdoors.
Motherhood is something really really special to me. I struggled with infertility for years and to have three beautiful little boys is more than I ever could have hoped for. I’m in love with my Gathre Mat. It’s so thin and easy to take along, and it cleans up so easy!!! My littlest one smeared Nutella all over it during this photo shoot and I pulled out a baby wipe and we were good to go.
I also adore my Little Unicorn Brookside Tote. It is big and roomy and perfect for toting around everything you need. I packed up my entire picnic, minus the pillows, all in this beautiful bag.
Replay has been a go-to in our house for years now. I discovered their plates at Walmart when my oldest was a baby and I’ve never looked back. I’ve gotten rid of all of my other mismatched kids plates and cups and serve meals to them exclusively on replay items. They are made from recycled milk jugs and they are sturdy and simple and perfect for kids.
One of our favorite toys are our name puzzles. How cute is this one from Smiling Tree Toys? My oldest has one that everyone plays with, so I was so excited to get one for my middle child – Graham. Graham is such a strong little boy. He is battling leukemia and still lives life to the fullest. He is truly my hero. Loves to play with his brothers and is the most stubborn little boy you ever did meet. Seeing him in these pictures really makes my heart smile. I love when I can get him out of the house and into nature when he’s feeling up to it.
Dragon’s Love Tacos is one of our favorite books – the boys think it is so so funny, and it is a go-to at bedtime.

Making “Silver-Dime” Pancakes
For these little pancakes I used Aubrey’s blender pancake recipe. I’ll include it in the recipe card below. Alternately you can use your favorite pancake mix. These babies are a bit smaller than a silver dollar pancake, so I like to call them silver dime pancakes. You need only a half tablespoon of batter for each cake. I love using my griddle for making these. You can make more than you can in a pan, and the nonstick surface makes for perfectly browned flapjacks.

Dapper Little Men
When I found out my first baby was a boy I knew I wanted to dress him like a tiny little man. I succeeded in this for many years. Now I am starting to lose the battle with character tee shirts, but for special occasions I always dress them just how I want. These little outfits make me die. I started with a dress shirt form H&M as my inspiration and went from there. I have gotten a lot of questions about these outfits from people I attend church with, so I’ve linked all the pieces below if you’re interested in recreating these dapper ensembles. A handsomely dressed little boy makes a mama heart happy.

- 1 C milk
- 1 C flour
- 1 egg
- 1 tbsp baking powder
- 1 tbsp sugar
- 2 tsp oil
- 1/2 tsp salt
- 1/4 C mini chocolate chips (optional)
- Bamboo Skewers
- 2 bananas, sliced
- 1 pint strawberries, hulled and sliced
- 1/4 cup nutella
- 1 carton blueberries
- Add all ingredients to blender and pulse until smooth and throughly mixed.
- If using a Blendtec.. press "batter" button and allow it to cycle.
- Pour batter using a half tablespoon measuring spoon and pour into circles on a non-stick griddle over medium-high heat.
- Add a few mini chocolate chips to the top. (optional)
- When the pancakes start to bubble, flip and cook the other side.
- Transfer to a cooling rack.
- Using a bamboo skewer thread 4 mini pancakes, spread with Nutella, a banana slice, a strawberry slice, and a blueberry.
- Can be served immediately or at room temperature.
