I'm really loving this Buddha Bowl week! They're healthy and do wonders for your PB&J lunches. Have you ever heard of Apricot Chicken?! It's amazing and you are going to want to give it a try. A few Sunday's ago I entertained my in-laws for dinner. It's always nice to have company over and give the nice dinnerware some use! I served this apricot chicken with veggies, fresh fruit and a few other small sides. The dinner turned out great.
