Breakfast is easily one of my most favorite meals of the day, except I could have it all day. Biscuits and gravy, waffles, bacon, hashbrowns, fruit, cinnamon rolls, eggs, doughnuts, it is all sodang good. Sometimes I need a hearty meal in the a.m. instead of my usual toast, oatmeal or smoothie, or sometimes breakfast is calling my name for dinner! Throw in some sauteéd veggies and homemade salsa and you’ve got an amazing start to your day.
I have Pioneer Woman’s salsa recipe memorized and it always gets rave reviews. If you’re not a fan of eggs in the Huevos Rancheros fashion, of course omit it. My half-Mexi girlfriend calls it my Gringa salsa, but I say it’s pretty delicioso.
- whole wheat pita pockets
- red bell pepper, diced
- green onions
- bacon (optional)
- fresh salsa
- Cook bacon, set aside.
- Sauté veggies in bacon grease, or in canola oil for vegetarian.
- Add eggs to veggies, scramble until cooked.
- Wrap pita pockets in slightly damp paper towel and warm in microwave 30 seconds.
- Spoon eggs and veggies into warm pita pockets, serve with fresh salsa.
