My husband, Jim, grew up in a town in northern San Diego called Fallbrook. The town is known for its amazing avocado groves. They claim the title of "The Avocado Capitol of the Country." Chicken Cacciatore is a dish that is perfect for a post farmer's market visit with all of it's fresh veggies and herbs. After Thanksgiving I always crave something light...something refreshing and simple. A few years ago I enjoyed a salad with craved turkey at a local restaurant in Utah that was so stinking good!
